GURGò
From the name of the district where Cantine Paolini has been producing its wines every day for over 50 years. Gurgò wines are born here, the perfect synthesis of a journey that has always followed the path of passion, work and tradition from the vineyards. A place where the presence of a basin with a sub-flat bottom of karst origin welcomed the flow of water, giving fertility to the land. Strictly DOC, Gurgò wines embrace the territoriality of Grillo, Nero D'avola, Frappato-Syrah, and the internationality of Viogner, Chardonnay. The Rosso Riserva is the bottled story of our journey of more than half a century.

Vineyards: trained against espalier
Harvest: by hand, mid-September
Vinification: the pressing of the grapes is soft and the alcoholic fermentation with maceration on the skins takes place at 28 °C for about 12 days. Once the malolactic fermentation has taken place, the wine ages for at least 6 months in large, very fine-grained oak barrels, before being transferred to vitrified cement vats. Refine 6 - 8 months in bottle to evolve the bouquet.
