GURGò
From the name of the district where Cantine Paolini has been producing its wines every day for over 50 years. Gurgò wines are born here, the perfect synthesis of a journey that has always followed the path of passion, work and tradition from the vineyards. A place where the presence of a basin with a sub-flat bottom of karstic origin welcomed the flow of water, giving fertility to the land.

Strictly DOC, Gurgò wines embrace the territoriality of Grillo, Nero D'avola, Frappato-Syrah, and the internationality of Viogner, Chardonnay. The Rosso Riserva is the bottled story of our journey of more than half a century.

Grapes: frappato (60%), syrah (40%)

Denomination: Sicily DOC

Soil: mixed, mainly calcareous

Vineyards: tree-trained

Harvest: by hand, between August and September

Vinification: the pressing of the grapes is soft and the alcoholic fermentation with maceration on the skins takes place at 27°C for about 11 days. Once the malolactic fermentation has taken place, the wine ages for at least 6 months in large, very fine-grained oak barrels and then moves into vitrified cement vats. The assembly takes place after aging in barrels. Refine 6 - 8 months in bottle to evolve the bouquet.

Organoleptic notes: ruby ​​red color with light purplish reflections, with a fragrant, intense, spicy and complex bouquet, rich in sensations with a well blended fruity and vanilla touch. On the palate it is rich, ample and velvety, with great structure and aromatic persistence, with elegant and gentle tannins.

Pairings: particularly suitable to accompany soups, savory first courses, grilled meats and vegetables.

How to serve it: it gives its best in large goblets with a wide mouth and a good height and served at a temperature of 18°C
