Javillier Bourgogne Blanc Oligocene 2017

Javillier oligocene 2017 - wimbledon wine cellar

This is a distinguished wine on the nose and on the mouth is full, vigorous and very fresh, mineral and with very fine floral notes; it has a slight citrus aroma finish, persistent and very well balanced: truly an elegant burgundy wine.

Serving suggestion: A wine for fish, shellfish and seafood dishes but also with some white meats and certain cheeses.

This aims to be the equivalent of a village Puligny-Montrachet. The wine has more impact than the frosted 2016 and there is very good balance provided by ripe acidity, which appears as less penetrating than usual. Drink 2021-2025.

For 2017 they didn’t need to keep too much of the lees, as the musts were already rich and they preferred to use bâtonnage for complexity. Harvesting began on 28th August and Marion (Patrick's daughter) feels there is a purer expression of terroir this year than last.
