Petit Epenots 53 years old, grands epenots 26 years old. Clay-limestone pinot noir grapes.
Wine-making: stalking, cold maceration for 3-5 days, temperature control, crushing and pumping 2 -3 times per day, total fermentation on skins: 18 - 20 days days. 16 - 18 months in french oak barrels, 30 - 40% of which are new.
Delicacy, density and an innate sense of balance are typical of this great wine. Colour is intense, very expressive nose with violet and red fruit aromas like cherry or morello cherry which express a great complexity. The mouth is fleshy and concentrated and the tannins are fine, velvety and elegant.
