Pinot Noir grapes from 50 year old vines and clay-limestone terroir. Strict sorting by hand on 2 tables, one of which is vibrating.
Wine-making: stalking, cold maceration for 3-5 days, temperature control, crushing and pumping 2 -3 times per day, total fermentation on skins: 16 - 18 days. 14 months in french oak barrels, 30% of which are new.
Classic Pommard with good structure. A complex nose with hints of red fruits, spices and flowers. The mouth is well balanced and structured with ripe and firm tannins.
