The new ‘E’ Etna Bianco is 100% Carricante, grown on the alluvial and clayey lava of Mount Etna’s slopes. Paolini lease vineyards off a local grower, and are the only cooperative winery to produce wine on the volcano. All the work is supervised by the Paolini team, and the wine (just like the Etna Rosso) is vinified on Etna.
The straw color has greenish reflections. The floral perfume has balsamic and cut notes. On the palate it is fresh and balanced; with long persistence it tastes.
Serving suggestions: Ideal with seafood dishes in general, fish seasoned with light sauces, dry soups and in broth with not excessively strong seasonings.
Ruby red color with soft violet reflections, with a complex, intense, spicy perfume with a fruity touch of wild strawberries, cherry, plum, mixed with light hints of red rose. On the palate rich, wide and velvety, with a great structure and aromatic persistence with an acidic aftertaste, soft and balanced tannins that gives a fresh acidity.
The Fattoi Rosso di Montalcino is a beautiful, elegant, juicy wine with full flavours of red and black fruit. Spicy notes and a nice long finish. Uncork the bottle at least 1 to 2 hours before serving. It is recommended to decant this wine so that the wine is well aerated.
